Ingredients

  • 2 Moira Mac’s Smoked Chicken Breasts 350g
  • 1/4 cup olive oil
  • 1 red onion, diced
  • 2 cloves garlic, sliced
  • 1 green capsicum sliced and/or zucchini
  • 1 red capsicum, sliced
  • 1 teaspoon smoked paprika
  • 1 tin (400g) diced tomatoes in juice
  • 2 cups cooked rice
  • 10 pitted Kalamata olives
  • 2 tablespoons fresh chopped herbs (+ extra for garnish)
  • 1 small lemon, sliced
  • Olive oil

Method

  1. Pre-heat the oven to 180 °C
  2. Heat the oil in a heavy based oven proof pan and sauté the onion, garlic, capsicums and or zucchini with the paprika and salt and pepper until the vegetables are just tender and coloured.
  3. Add the tomatoes, rice, olives and herbs and mix all together.
  4. Cut the smoked chicken breast into chunky pieces and nestle into the flavoured rice mix. Add a few lemon slices and a good swirl of olive oil.
  5. Bake for 15-20 minutes until thoroughly heated and starting to caramelise on top. Sprinkle with fresh herbs.
