- 2 Moira Mac’s Smoked Chicken Breasts 350g
- 1/4 cup olive oil
- 1 red onion, diced
- 2 cloves garlic, sliced
- 1 green capsicum sliced and/or zucchini
- 1 red capsicum, sliced
- 1 teaspoon smoked paprika
- 1 tin (400g) diced tomatoes in juice
- 2 cups cooked rice
- 10 pitted Kalamata olives
- 2 tablespoons fresh chopped herbs (+ extra for garnish)
- 1 small lemon, sliced
- Olive oil
Method
- Pre-heat the oven to 180 °C
- Heat the oil in a heavy based oven proof pan and sauté the onion, garlic, capsicums and or zucchini with the paprika and salt and pepper until the vegetables are just tender and coloured.
- Add the tomatoes, rice, olives and herbs and mix all together.
- Cut the smoked chicken breast into chunky pieces and nestle into the flavoured rice mix. Add a few lemon slices and a good swirl of olive oil.
- Bake for 15-20 minutes until thoroughly heated and starting to caramelise on top. Sprinkle with fresh herbs.
