- 6 spring roll rice paper rolls
- 150g Moira Mac’s BBQ Chicken Breast Slices
- 1 cup cooked vermicelli noodles
- Sliced red and yellow pepper
- Sliced spring onions
- Sliced cucumber
- Coriander leaves
- Rocket leaves (optional)
- Satay sauce to pop into a small container for dipping
Method
- Soften the rice paper as per instructions.
- Layer down the middle with sliced chicken, noodles, spring onions, peppers, cucumber, coriander, and rocket leaves.
- Fold one side over to the next like you are rolling up a wrap. You can tuck the bottom up if you prefer to keep everything intact.
- Pop into your lunchbox and serve with a small side of satay sauce for dipping in a separate container.
