Pulled Chicken Breast, Brie and Melted Cheese Toastie with Sweet Chilli Relish

Ingredients

  • 4 slices of grainy sourdough loaf
  • Moira Mac’s Pulled Chicken Breast
  • 1/2 red onion finely sliced
  • 100g raclette cheese grated – you can use provolone or any other washed rind melting cheese
  • 100g brie sliced
  • 1 heaped tablespoon mustard
  • Small bunch chives finely chopped
  • Sweet chilli relish
  • Butter

To serve: caperberries and gherkins

Method

  1. In a small bowl mix together pulled chicken, red onion, melted Swiss cheese (raclette), mustard and a handful of chives.
  2. Butter the outside of each slice of bread generously.
  3. Spread the filling onto the unbuttered inside bottom slice and top with 2 slices of brie and a few large dollops of sweet chilli relish. Place a slice buttered side up on top.
  4. Fry the toastie in a large, lidded fry pan, turning over after 1 min or so, making sue the bread is nice and caramelised and the cheese is melting.

To serve: sprinkle with chives and extra sweet chilli relish, gherkins and caperberries.
