- 250g Moira Mac’s Classic Roast Chicken Breast Slices or 220g Moira Mac’s Turkey Breast Slices
- 2 courgettes sliced
- 1/2 red onion finely chopped
- 3 garlic cloves thinly sliced
- 1 punnet cherry tomatoes halved
- 1/2 red pepper roughly chopped
- 1/2 yellow pepper roughly chopped
- 1 pack spaghetti
- 340ml pasta sauce
- 500ml chicken or vegetable stock
- 1 bunch fresh basil leaves
- 2 handfuls baby spinach
- Salt and pepper
- Parmesan cheese to serve
Method
- Preheat oven 180 °C fan bake
- Place all the ingredients into a large deep oven proof pot with lid (you may have to snap the spaghetti in half to fit it in) and bake in the oven for 30-45 minutes or until the spaghetti and vegetables are tender
- To serve: toss the ingredients together with tongs and place on the table straight in the pot with serving bowls and parmesan cheese
