Method

  1. Pre-heat oven to 190°C line a large tray with baking paper.
  2. Arrange the potato wedges in the tray in single layer top with half the grated cheese, then arrange the chunky sliced chicken breast on top.
  3. Dollop with a little sour cream and remaining grated cheese.
  4. Bake for 10-12 minutes until golden then top with red onion, drizzle over sweet chilli and scatter with fresh chopped coriander and spring onion.
