- 1-2 packets Moira Mac’s Portuguese Sliced Chicken Breast 150g
- 2 cups cooked mixed grain rice (or cous cous or orzo)
- 1 tin (400g) sweetcorn kernels, drained
- 2 small Lebanese or baby cucumbers, sliced
- 1 cup halved cherry tomatoes
- 2 tablespoons chopped herbs
- 1 red chilli, sliced or red capsicum if preferred
- 1/2 cup Peri Peri dressing
- Additional toppings: sliced avocado, spring onion, herbs and seasoning
Method
- In a large bowl combine the rice, corn, cucumber, tomatoes, herbs and chilli and toss with half the dressing.
- Transfer to a serving bowl and top with lots of sliced Portuguese chicken breast.
- Drizzle over remaining dressing and add your favourite toppings.
