Ingredients

  • 1-2 packets Moira Mac’s Portuguese Sliced Chicken Breast 150g
  • 2 cups cooked mixed grain rice (or cous cous or orzo)
  • 1 tin (400g) sweetcorn kernels, drained
  • 2 small Lebanese or baby cucumbers, sliced
  • 1 cup halved cherry tomatoes
  • 2 tablespoons chopped herbs
  • 1 red chilli, sliced or red capsicum if preferred
  • 1/2 cup Peri Peri dressing
  • Additional toppings: sliced avocado, spring onion, herbs and seasoning

Method

  1. In a large bowl combine the rice, corn, cucumber, tomatoes, herbs and chilli and toss with half the dressing.
  2. Transfer to a serving bowl and top with lots of sliced Portuguese chicken breast.
  3. Drizzle over remaining dressing and add your favourite toppings.
