Smoked Turkey and Beetroot Brushcetta

Ingredients

  • 1 Moira Mac’s Smoked Turkey Breast, very thinly sliced (you can use a knife or mandolin)
  • 1 small French bread stick or similar
  • 50g butter, melted
  • 100g cream cheese
  • 100g goats’ cheese
  • Fresh thyme leaves (+extra for garnish)
  • 1 teaspoon honey
  • Cracked pepper
  • 1 jar beetroot relish or you can use cranberry jelly
  • 1-2 radishes, thinly sliced

Method

  1. Cut the bread stick on the angle into 2 cm thick slices and brush with the melted butter, toast in the oven or frying pan for a few minutes until golden.
  2. Combine the cream cheese, goats’ cheese, a few thyme leaves, honey and cracked pepper and mix tighter to make a creamy spread.
  3. Garnish the bruschetta with a dollop of beetroot relish, a few radish slices and fresh thyme leaves.
