- 6 pack lunch rolls
- 1 x 150g pack Moira Mac’s Pulled Chicken Breast
- 1/4 cup mayo
- 1 tbsp BBQ sauce
- 1 tbsp tomato chutney
- 2 tbsp finely diced red onion, or 2 spring onions finely chopped
- 1/4 cup grated cheese
- small bunch chives finely chopped
- lettuce leaves of your choice
- Optional: finely chopped dill pickles or slices
Method
- Into a medium bowl add the Kentucky chicken, mayo, BBQ sauce, tomato chutney, onion, grated cheese and chives. Season with a pinch of salt and cracked pepper the fold together until well combined
- Cut the rolls in half horizontally and spread butter on the bottom and mayo on the top cut halves. Place a salad leaf on the bottom and then spread evenly with a generous spoonful of chicken filling. Top with another salad leaf and finally the bun lid. Repeat until you have assembled all the rolls
- Place onto a serving plate with a side of dill pickles
