- 1-2 Moira Mac’s Portuguese Chicken Breasts 350g
- 1 x tin (400g) mixed beans, rinsed
- 250g green beans, blanched
- 1/2 cup sliced sun-dried tomatoes
- 2 celery stalks, finely sliced
- 1/4 cup pickled pink onions
Dressing:
- 1/4 cup chopped fresh herbs
- 1/4 cup olive oil
- 2 tablespoons lemon juice or apple cider vinegar
- 1 clove garlic, crushed
- 1/2 teaspoon smoked paprika
- Sea salt & cracked pepper
Method
- Dice the chicken breast into chunky bite sized pieces.
- Combine the dressing ingredients and mix well.
- Combine the tinned beans, green beans, celery and sun-dried tomatoes with half the dressing and mix well, transfer to a serving bowl.
- Top with the diced chicken, extra sun-dried tomatoes, and marinated onions, pour over remaining dressing and toss just before serving.
- Serve with lemon wedges and garlic toasted pita breads.
- Add a spoonful or two of hummus to make a creamy dressing.
