Portuguese Chicken & Bean Salad

This simple salad has lots of punchy flavour, great for a quick dinner or a working lunch and can be pre-prepped.

Ingredients

  • 1-2 Moira Mac’s Portuguese Chicken Breasts 350g
  • 1 x tin (400g) mixed beans, rinsed
  • 250g green beans, blanched
  • ½ cup sliced sun-dried tomatoes
  • 2 celery stalks, finely sliced
  • ¼ cup pickled pink onions
  • Dressing:
  • ¼ cup chopped fresh herbs
  • ¼ cup olive oil
  • 2 tablespoons lemon juice or apple cider vinegar
  • 1 clove garlic, crushed
  • ½ teaspoon smoked paprika
  • Sea salt & cracked pepper

Method

  1. Dice the chicken breast into chunky bite sized pieces.
  2. Combine the dressing ingredients and mix well.
  3. Combine the tinned beans, green beans, celery and sun-dried tomatoes with half the dressing and mix well, transfer to a serving bowl.
  4. Top with the diced chicken, extra sun-dried tomatoes, and marinated onions, pour over remaining dressing and toss just before serving.
  5. Serve with lemon wedges and garlic toasted pita breads.
  6. Add a spoonful or two of hummus to make a creamy dressing.
