- 2 packets Moira Mac’s Pulled Chicken Breast 150g
- 2 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, crushed
- 1 teaspoon smoked paprika
- 1/2 red capsicum, finely diced
- 1 tin (400g) kidney beans, rinsed
- 1 jar (400g) classic tomato pasta sauce
- To serve; white rice, diced avocado, fresh herbs, spring onion, limes, red chilli
Method
- Heat the oil in a large saucepan or deep pan and sauté the onion, garlic, paprika and capsicum until soft and fragrant.
- Add the beans and pasta sauce and simmer for 5 minutes.
- Add the pulled chicken and simmer a further 5 minutes then season to taste.
- Serve in bowls over white rice and top with diced avocado, herbs, spring onion and chilli.
