CHICKEN & BACON CLUB SANDWICH WITH CREAMY RANCH MAYO

Ingredients

  • 1 packet Moira Mac’s Shredded Chicken 150g
  • ½ cup thick and creamy mayo
  • ½ teaspoon mustard
  • ½ teaspoon garlic powder
  • ½ finely grated parmesan cheese
  • 3 slices soft wholemeal bread
  • 4 - 6 Cos or buttercrunch lettuce leaves
  • 4 rashers bacon, cooked to your liking and cut into strips

Method

  1. Combine the mayo, mustard, garlic powder, parmesan and season well with salt and pepper and mix until creamy and smooth.
  2. Spread the first slice of bread with the mayo then top with lettuce, bacon strips and plenty of shredded chicken.
  3. Top with another slice of bread and repeat the fillings, lastly sandwich tighter with the remaining slice of bread to create a stack.
  4. Carefully cut into four triangles and secure each with a toothpick or skewer.
