Ingredients

  • 6 spring roll rice paper rolls
  • pack Moira Mac’s BBQ Chicken Breast Slices
  • 1 cup cooked vermicelli noodles
  • Sliced red and yellow pepper
  • Sliced spring onions
  • Sliced cucumber
  • Coriander leaves
  • Rocket leaves (optional)
  • Satay sauce to pop into a small container for dipping

Method

  1. Soften the rice paper as per instructions.
  2. Layer down the middle with sliced chicken, noodles, spring onions, peppers, cucumber, coriander, and rocket leaves.
  3. Fold one side over to the next like you are rolling up a wrap. You can tuck the bottom up if you prefer to keep everything intact.
  4. Pop into your lunchbox and serve with a small side of satay sauce for dipping in a separate container.
