- 1-2 Moira Mac’s BBQ Roasted Chicken Breast 350g
- 8 baby cos lettuce leaves
- 1 carrot, peeled and shredded or finely julienned
- 1/2 red capsicum + 1/2 yellow capsicum, finely sliced
- 1/2 red onion, finely sliced
- 1-2 radishes, finely sliced
- 1 Lebanese or small cucumber, seeds removed and finely sliced
Dressing:
- 1/4 cup apple cider vinegar
- 1 teaspoon white sugar
- 1 tablespoon sesame oil
- 1/2 cup hoisin sauce to serve
- Garnishes: lime wedges, sliced red chilli or chilli flakes and sesame seeds
Method
- Combine the finely sliced vegetables and toss with the dressing ingredients, allow to marinate for 10 minutes or up to an hour.
- Arrange the lettuce cups on a serving tray and half fill each with the colourful pickled vegetables.
- Top each lettuce cup with 2-3 slices chicken breast and drizzle over hoisin sauce.
- Add chilli, sesame seeds and a squeeze of lime just before serving.
