What you will need
- 350g Moira Mac's Barbeque Roasted Chicken Breast, thinly sliced
- 2 cups each red and green cabbage, finely shredded
- 2 carrots, peeled and julienned
- 3 shallots, thinly sliced on a diagonal
- 1 small red capsicum, thinly sliced
- Lime juiced and zested
- ½ cup chopped mint leaves
- ½ cup coriander leaves
- To serve: Toasted white sesame seeds and fried shallots
- Sesame and lime Asian dressing: Juice of 1 lime, 2 teaspoons sesame oil, 1 tablespoon soy sauce, 2 tablespoons sweet chilli sauce
Instructions
- In a small bowl, mix dressing ingredients. Set aside
- Combine all ingredients except chicken, in a large bowl. Drizzle with dressing
- Divide between 4 serving bowls and top with Moira Mac's Barbeque Roasted Chicken Breast, fried shallots and sesame seeds
