Asian Slaw with chicken, lime, black sesame and fresh herbs

Fresh and vibrant, this Asian slaw with roasted chicken breast, lime, and sesame is a zesty, flavour-packed dish topped with fresh herbs and crunchy fried shallots.

What you will need

  • 350g Moira Mac's Barbeque Roasted Chicken Breast, thinly sliced
  • 2 cups each red and green cabbage, finely shredded
  • 2 carrots, peeled and julienned
  • 3 shallots, thinly sliced on a diagonal
  • 1 small red capsicum, thinly sliced
  • Lime juiced and zested
  • ½ cup chopped mint leaves
  • ½ cup coriander leaves
  • To serve: Toasted white sesame seeds and fried shallots
  • Sesame and lime Asian dressing: Juice of 1 lime, 2 teaspoons sesame oil, 1 tablespoon soy sauce, 2 tablespoons sweet chilli sauce

Instructions

  1. In a small bowl, mix dressing ingredients. Set aside
  2. Combine all ingredients except chicken, in a large bowl. Drizzle with dressing
  3. Divide between 4 serving bowls and top with Moira Mac's Barbeque Roasted Chicken Breast, fried shallots and sesame seeds
