Pistachio Turkey Festive Salad

Ingredients

  • 1-2 Moira Mac’s Festive Turkey Breast with Pistachio and Cranberry, thinly sliced
  • 400g diced pumpkin
  • 8 baby carrots, halved lengthwise
  • 1 small red onion, cut into wedges
  • 1 red capsicum, cut into bite sized strips
  • 2 tablespoons each: olive oil and maple syrup
  • Salt and pepper
  • 1/2 cup pecans
  • Rocket leaves or salad greens

Method

  1. Pre-heat the oven to 180℃ and line a large roasting tray with baking paper.
  2. Toss the pumpkin, carrots, onion and capsicum with the olive oil, maple syrup and seasoning and mix well.
  3. Arrange the vegetables on the tray and roast for 10-12 minutes then add the pecans and roast a further 5 minutes or until vegetables are tender and pecans toasted.
  4. Combine the dressing ingredients in a jar and shake well.
  5. Arrange the rocket and vegetables on a platter or individual serving plates and top with the Pistachio Turkey Slices.
  6. Drizzle over dressing when ready to serve.
