- 250g Moira Mac’s Chicken Breast Supreme, thinly sliced
- 1 small red onion, finely diced
- 2 celery stalks, finely diced
- 1/4 cup continental parsley, finely chopped
- 1/2 cup whole egg mayonnaise
- 1 tablespoon Dijon mustard
- Salt and pepper
- 50g rocket
- 2 Baguette halves
Method
- In a large bowl, combine onion, celery, parsley, walnuts.
- In a separate small bowl, mix together the mayonnaise and mustard. Season to taste. Stir half of the mayo mix into the onion mix until fully coated.
- Cut the baguettes open and spread with remaining mayo mix. Evenly divide the mixture between. Add the Moira Mac’s Chicken Breast Supreme then top with rocket. Season with extra salt and pepper, to taste.
