Ingredients

  • 2x150g Moira Mac’s Classic Roast Chicken Breast Slices
  • 2 cups cooked white rice
  • 1 x 400g tin black beans, rinsed and drained
  • 1 cup chopped tomatoes
  • 2 avocados, sliced
  • 1 lime, juiced, plus extra wedges/cheeks to serve
  • 1/3 cup coriander sprigs
  • 4 tablespoons sour cream
  • 1 tablespoon chipotle sauce
  • Lime wedges, coriander and sliced red onion, to serve

Method

  1. Mix the sour cream and chipotle sauce in a medium sized bowl. Add the Moira Mac’s Roast Chicken Breast Slices and stir to coat. Set aside.
  2. Divide the ingredients evenly between the 4 bowls, placing 1 tablespoon of sour cream mix on top of each. Season with salt and freshly cracked pepper.
  3. Serve topped with lime wedges, coriander and sliced red onion.
