Pulled Chicken Chilli Con Carne

Make a quick, crowd-pleasing chilli con carne using Moira Mac’s Pulled Chicken Breast. Easy to customise for the family, it also works perfectly in tacos or enchiladas and is a tasty addition to your dinner chicken recipes.

Ingredients

  • 2 packets Moira Mac’s Pulled Chicken Breast 150g
  • 2 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, crushed
  • 1 teaspoon smoked paprika
  • 1/2 red capsicum, finely diced
  • 1 tin (400g) kidney beans, rinsed
  • 1 jar (400g) classic tomato pasta sauce
  • To serve; white rice, diced avocado, fresh herbs, spring onion, limes, red chilli

Method

  1. Heat the oil in a large saucepan or deep pan and sauté the onion, garlic, paprika and capsicum until soft and fragrant.
  2. Add the beans and pasta sauce and simmer for 5 minutes.
  3. Add the pulled chicken and simmer a further 5 minutes then season to taste.
  4. Serve in bowls over white rice and top with diced avocado, herbs, spring onion and chilli.
