Ingredients

  • 350g of Moira Mac’s Festive Turkey with Cranberry and Pistachio, thinly sliced
  • 1 granny smith apple, very thinly sliced into rounds
  • 1 jazz apple, very thinly sliced into rounds
  • 2 radishes, thinly sliced
  • 50g feta, crumbled
  • 100g baby spinach
  • 100g baby rocket
  • 2 tablespoons Pistachios, roughly chopped, to garnish

Dressing

  • 1/4 cup extra virgin olive oil
  • 2 tablespoons honey
  • 1 tablespoon white wine vinegar
  • 3 teaspoons Dijon mustard

Method

  1. Layer all of the salad ingredients in a large bowl, adding the feta and pistachios on the top.
  2. Combine the dressing ingredients in a small bowl and whisk with a fork until combined.
  3. Drizzle over the salad and serve.
